Banana Cake Made Vegan
2 Very Ripe Bananas
7 tbsp Coconut oil or Vegan Butter
1 ½ cups Plant based Milk
1 cup Brown Sugar
3 cups All Purpose Flour or you can mix it with Oat Flour
1 tsp Cinnamon Powder
2 tsp Baking Soda
1 tsp Himalayan Pink Salt
6 tbsp Rum (optional)
- Combine all the ingredients in a mixing bowl.
- Pour into a greased lined cake pan(s) or you can use parchment paper and bake in a preheated (375°F / 190°C) oven for 15 minutes, reduce temperature to (350°F / 176°C) and bake for the remaining 15 minutes or until a toothpick inserted into the center comes out clean.
You can also put the mixture into the muffin trays and enjoy this cake as a mini muffin cake.
- Cake can be stored at room temperature for up to 4 days or up to 10 days if you keep it in the fridge. But i doubt it will last that long. I am sure you and your family will eat it in one day. It is that good.
- MY EXTRA TIP: You can add frozen berries into the mixture before you put it to bake. Mmmmm this will be delicious. I will try it with raspberries and blueberries next time.
