Cashew Alfredo Pasta

Spoil yourself with this Divine Vegan Alfredo!


  • 1 cup Cashew Nuts (soaked over night or boiled)

  • Pasta of your choice (brown, lentil, chickpea, gluten free …)

  • 1 tsp Marmite

  • 1 Veggie Stock (cube)

  • 1 Garlic

  • ½ cup Mushrooms

  • 1 Smoked Tofu (block)

  • ½ Onion

  • 1 cup Plant based milk (almond, soy …)

  • Black pepper

  • Coconut oil


  • Cook your pasta according to the instructions on the package.
  • Cut the onion, tofu and mushrooms. Add them to the frying pan with a bit of coconut oil and saute until you see brown crisp on the edges of the tofu.
  • In the blender add all the rest of the ingredients and blend until smooth. Test the taste and add salt if it’s not tasty enough.
  • Over the onion, tofu and mushroom pour the sauce and mix very well. Adjust the thickness with added plant milk or water.

    At the end add your pasta and stir it well.
    Garnish it with some spices of your liking.
