Buckwheat with Veggies, Walnuts and Pumpkin oil

Have you ever tried Buckwheat?

Ingredients

  • 1 cup Buckwheat

  • 1 Carrot

  • ¼ cup Walnuts

  • ½ cup Peas

  • ½ Red Bell Pepper

  • 50 g Firm Tofu

  • 1 cup Rocket

  • 1 dash Himalayan Salt

  • 1 dash Black Pepper

  • 3 tbsp Pumpkin Oil

  • ½ Onion

  • 2 Cloves of Garlic

  • 1 tsp Coconut oil

  • 1 tsp Sesame seeds

Directions

  • Cook 1 cup of buckwheat in 2 cups of salted water.
  • Cut all the vegetables in small cubes. In fraying pan saute onion and garlic, add vegetables and stir it often. Add cooked buckwheat, walnuts and seasonings. Let it stir fry for 2 min and mix often.
  • Meanwhile prepare your tofu. Cut tofu in small cubes and saute it in coconut oil, add salt and pepper and sesame seeds.
  • Place your buckwheat on a plate and add tofu. Over the dish pour delicious pumpkin oil and garnish it with rocket or any other green leafy vegetable.
